An enzyme is a protein that catalyzes a biochemical reaction. It converts a substrate into a product. Each enzyme has a structure tailored to its function, and its activity depends on an optimal temperature and pH. Beta-thrombin is obtained by cleavage of alpha-thrombin at the intact B chain at the Arg106-Tyr107 bond to produce the B1 and B2 fragments.
